Cinnamon Pancakes

It is time for Feast Friday!  This Feast Friday will be a little different.  The meal for this Feast Friday is Cinnamon Pancakes!  It is a sweet spin on a simple breakfast meal. On a side note, I didn’t get any personal pictures from my creation because my family ate everything! I slaved under that hot stove and they ate everything before I could photograph the food. Apparently, the food was delicious and my family couldn’t help themselves. I took the featured image from Allrecipes’ cinnamon pancakes recipe. My recipe is simple, easy to make, and delicious. Without further ado, time for my cinnamon pancakes recipe!

Ingredients:

1 cup of Aunt Jemima pancake mix

1 egg

1 tablespoon of olive oil

3/4 cup of almond milk

1/3 cup of cinnamon

2 teaspoons of vanilla extract

Directions:

Pour the cup of pancake mix into a bowl and add the milk, egg, and oil. Combine the ingredients until it is completely lumped together. Begin to add the vanilla extract as you stir the mixture; the cinnamon is added last to the batter. Once the ingredients are blended, let the batter sit until the substance is lumpy.

After the batter begins to lump, fire the stove on low heat and get ready to cook some pancakes. Cook the pancakes for 5 minutes each side or until little holes appear on the pancake. Flip the pancake and repeat the process. You should have a total of 8 pancakes by the end of the batter. Drizzle the pancakes with maple syrup and add apple slices to complete the meal.

Pumpkin Turkey Chili

Hey Babes!

It is time for another recipe.  I wanted to get into the autumn spirit and cook a hearty, warm meal for the family.  And only one dish popped into my head – chili.  Chili is a dish that everyone loves when fall begins, but what can make the chili better?  Pumpkin!  Pumpkin is great in every form and represents the autumn season.  I combined pumpkin to enhance the flavors in the chili and bring the fall feeling to life. The sweet-savory taste of the pumpkin and spicy flavor of the chili creates the perfect meal to share with the family!

Ingredients:

1 lb. Ground Turkey

1 Can of Pumpkin Puree

6 Mini Bell Peppers

1 Can of Kidney Beans (drained)

1 Can of Black Beans (drained)

I 1/2 Jar of Tomato Sauce

1/3 Cup of Shredded Cheese

Salt

Pepper

Cayenne Pepper

Directions:

First, cook the ground turkey in a pot with the bottom covered in extra virgin olive oil.  Stir the turkey as you season it with salt, pepper, and cayenne pepper. After seasoning the turkey, let the ground turkey cook in the pot on medium heat for twenty-five minutes.  Once the turkey cooks to perfection, we can move on to the next steps.

Pour the can of pumpkin puree onto the ground turkey and mix the two.  Stir the two ingredients together until the pumpkin completely covers the turkey.  Add the black beans and kidney beans to the cooked ground turkey and pumpkin.  Mix the ingredients at medium heat and let the flavors morph together.

Add the bell peppers and tomato sauce to the mixture.  After stirring the ingredients all together, let the food simmer for 15 minutes.  Turn off the heat after 15 minutes, sprinkle the cheese on top of the chili, and give the food time to cool down.  And there you have it!  Delicious pumpkin turkey chili that the whole family can enjoy.

Honey Garlic Chicken Pasta

Guess what day it is?  it is Feast Friday!

I decided to try something I didn’t think would work well together — honey and garlic.  The idea of the two ingredients mixing sounds terrible.  After tasting the two ingredients combined, the idea became terribly good.  I added pasta and broccoli to complete the meal.  So check out the recipe below.

Ingredients:

6 chicken breasts (chopped)

3 garlic cloves (minced)

1 1/2 cup of honey

a box of thick spaghetti

1 cup of broccoli

Salt

Pepper

Extra virgin olive oil

Directions:

Before you start to cook, let the chicken marinate in extra virgin olive oil with salt and pepper.  Keep the chicken in the mixture for an hour before slicing the chicken breasts into little pieces.  Once the chicken is cut into pieces, place the chicken pieces into the pan.  Cook the chicken on medium heat for 20 minutes.  While the chicken is cooking, we can start making the sauce!

Use a small pot with a little extra virgin olive oil to start.  Next, add the smashed garlic and the 1 1/2 cups of honey to the pot.  Stir the mixture in the pot at medium heat until the mixture is thick.  The mixture does not need to be too thick, but the substance should not be watery.  Cover the chicken with the mixture and set the chicken to the side to cook the pasta and broccoli.

Cook the pasta in salted boiling water for 11 minutes.  And cook the broccoli in salted boiling water for 15 minutes.  Let the two cook at the same time.  Once the pasta is done cooking, drain the pasta and run cold water over the noodles.  Afterwards, combine the chicken with the pasta in a bigger bowl.  Mix the broccoli into the chicken pasta after the broccoli is cooked and drained.  And voila! The recipe for honey garlic chicken pasta.

Jerk Chicken Stir Fry

Welcome to Feast Friday!

Every Friday I will post a recipe for a delicious meal that is easy to follow and satisfies your cravings.  The first recipe for our Feast Friday is my version of chicken stir-fry. I chose this timeless dish because it is easy to make and fills the stomach.

Ingredients:

4 chicken breasts or thighs

3 mini bell peppers

half of an onion

1 full carrot

Extra virgin olive oil

Soy sauce

Jerk seasoning

Salt

American Cheese (optional)

 

Directions:

Firstly, season the chicken with jerk seasoning, salt, and soy sauce.  Make sure the chicken is cleaned before seasoning.  Cover the chicken with the seasoning and leave it to the side.  The order of seasoning does not matter because the chicken will be marinating for 30 minutes to an hour.

After the chicken is done soaking in the seasoning, put the frying pan on low heat.  Pour the extra virgin olive oil until it covers the bottom of the pan.  Keeping the stove on low heat, place the chicken breasts one by one into the pan.  Let the chicken cook at medium heat for a little over 5 minutes.

While the chicken is cooking, wash off the vegetables and prepare to cut them all in cubes.  Again, the order does not matter, however, I started with the bell peppers first to cut the seeds out.  Repeat the same dicing style with the onion and carrot.

Now that the vegetables are diced, flip the chicken breasts to the other side and add the vegetables in all together.  Take a minute to cut the chicken into little strips before stirring the ingredients together for a few minutes.  Once the food is stirred, place the top on the pan and let the food simmer on medium heat for 15 minutes.

Note: Add the cheese after 10 minutes of letting the food simmer. Let the cheese melt for the next five minutes then continue with the last step.

After 15 minutes, the food will be ready.  You can eat the chicken stir fry with noodles, rice, or by itself.  This is a great way to spice up a classic dish!  Follow my recipe and you will be having people think you were BORN to be a chef!
